Sophie Cozine is a self-described "zillenial" herbalist living in Brooklyn, NY. Balancing the fast-paced energy of city life with her deep connection to plants, Sophie finds ways to bring nature into urban spaces through her craft. As the creator of Parch’s Sunrise Supertonic, she uses her expertise to make beverages that not only taste amazing but also nourish the mind and body.
Tell us about yourself! What’s your deal?
I’m an herbalist living in Brooklyn, which isn’t always easy because you can feel disconnected from nature here. But that’s where the herbs come in! They connect us back to the plants and to nature, even in the middle of the city.
How would you describe your current relationship with drinking?
I was sober for a year and a half, and it completely transformed my relationship with alcohol. These days, I drink very sparingly—usually a Jun or hard kombucha. Honestly, the time away gave me a refreshing new perspective. I often opt for NA options when I’m out because I feel more energized that way. Sometimes I’ll even pregame with a PARCH or energizing adaptogens like Damiana. Green tea gets me hype too!
What surprised you the most when you first changed your drinking habits?
The benefits are endless! More energy, brightness, strength, clarity. Alcohol is a depressant—it slows down parts of your brain and makes things feel “fuzzy.” When you go out sober, you wake up the next day feeling energized and clear. No hangovers, no blackouts, no sinking feelings. It’s truly a game-changer.
How does your career as an herbalist play into making non-alcoholic beverages?
When I started formulating with Parch, I was deep into my sobriety journey. I’m also a musician, so I’m always surrounded by drinking and partying. I’d already been using herbs to lift my spirits and ease social anxiety when I went out. So when I started working with Parch, I knew we needed to create something that not only elevated the mood but also soothed the nerves.
